David Smith's determination to encourage young people to look at all possibilities and learn new skills led him to embrace the Modern Apprenticeship programme from the moment he took over the Buccleuch Arms Hotel in 2005.

David's Modern Apprentices are actively encouraged to learn all about the different functions of the hotel and how their individual roles impact on other staff activities. For example, each member of the team is invited to taste new menu creations and learn how they are made so they can speak knowledgeably about the dishes to customers.

David came up with innovative ways to boost his staff's knowledge. Two years ago he sent the waiting staff on a visit to a vineyard in Italy to learn about the different varieties of grapes. Staff have also been put through neuro-linguistic programmes to teach them about customers' body language.

Each of the 24 staff has the opportunity for personal development, and Modern Apprenticeships increase staff retention in a sector which historically has a higher than average turnover.

David said: 'I was expecting resistance when I decided to start using the Modern Apprenticeship scheme but the staff immediately understood how they could benefit. I think it's an amazing scheme. It encourages career development at every stage.'
